Micro Greens – the latest fad in Healthy Eating

What are Micro Greens?

MicroGreens are the edible young seedlings of immature plants, harvested at 7-14 days after germination. Typically ranging in size from 1-3 inches tall, MicroGreens are older than sprouts and much younger than petite or baby greens. MicroGreens are specifically selected for their unique color and flavor.

Microgreens are a stunning visual and national addition to any dish.

MicroGreens have gained popularity as a new culinary trend in the past few years. MicroGreens first became popular in the middle of the 1990s in California and the first use of the word “microgreens” was documented in 1998. These tender greens have two fully developed cotyledon leaves, with or without the emergence of a few first true leaves. It is these young cotyledon leaves often referred to as the seed leaves, that poses higher nutritional densities.

How long do they last after harvest?


All harvested greens will last longer if stored properly. Keep microgreens between damp paper towels, and make sure they are cold and covered in a re-sealable bag or container.

How are they used?

Widely used in salads, these little greens add a distinctive flavour and bite to all kinds of salads. Italian cuisine favours a liberal use of micro greens too particularly in pastas and pizzas. Some of our local buyers have even started using it in Indian cuisine and are enjoying the increasing comments of “what is this ingredient that causes this dish to taste so different”, “I have not had dal like this before”!

Wrapped this way, they’ll last in the fridge for about a week. Keep greens covered right up until the point when they hit the plate—this will ensure that they don’t wilt or dry out during service.
